Hi everyone,
I've received several requests for my famous lemon bundt cake receipt so I thought I'd post it here. It's so yummy. I go the recipes from All Recipes and I tweaked it to my liking. If you're in the mood for lemon this is the ultimate! Enjoy!
Ingredients:
1 (18.25 oz) package lemon cake mix (don't buy with pudding already in the mix.)
1 (3.4 oz) package instant lemon pudding mix
1/2 c. vegetable oil
4 eggs
1 c. lemon-lime flavored carbonated beverage (i.e. 7-up)
1 T. lemon zest
1/4 c. lemon juice
1. Preheat oven to 350°F. (165°C). Grease and flour a 10 inch bundt pan. Do this really well so the cake won't stick.
2. In a large bowl, combine cake mix and pudding mix, then stir in oil and lemon juice. Beat in the eggs, one at a time. Stir in the lemon-lime soda but don't beat it. Just stir it enough to mix it in.
3. Pour batter into prepared pan. Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the center of the cake comes out clean. Allow to cool for 15 minutes then invert onto your serving plate.
4. Drizzle with glaze. For the glaze I use 4 T. fresh lemon juice, 2 T. grated lemon peel and 1 1/3 c. sifted powdered sugar. Add a teaspoon or so of the lemon-lime soda if you like. It's tasty! The sifting is important as is the fresh lemon and fresh lemon peel. Dust with sifted powdered sugar if you'd like.
Next time I make one I'll take a picture. It's a very pretty and very tasty cake!
